SIDE DISHES...
The following Indian recipes for side dishes compliment the meal by offering a variety of texture. The cucumber raita is a cooling dish, and helpful to those who may find a particular curry a little too hot. 
Cucumber Raita
- 1 cup plain unsweetened yoghurt
- 1/2 cucumber, grated or sliced
- 1 tsp freshly ground black pepper
- pinch of salt
- pinch chili powder
In a bowl beat the yoghurt until creamy. Add the other ingredients and stir gently to mix. Chill. Garnish with a pinch chili powder and black pepper sprinkled over the top.
Boondi Raita
- 2 tablespoons boondi
- 1 cup plain unsweetened yoghurt
- 1/4 tsp ground cumin
- 1/8 tsp ground chili powder
Soak the boondi in hot water for 2 minutes, drain and squeeze gently to remove most of the water. Set aside.
In a bowl beat the yoghurt until creamy. Stir in the boondi. Sprinkle with the spices and stir gently. Chill. Garnish with cilantro before serving.
Tomato & Onion Salad
- 1 medium tomato - chopped
- 1 medium onion - finely chopped
- 2 tbs lemon juice
- 1/2 tsp salt
- 1/4 tsp chili powder
Mix all ingredients in a bowl. Chill. Garnish with a few sprigs of cilantro.
