Semolina Halwa

  • 1/3 cup raisins
  • 1/3 cup broken cashew nuts
  • 1 tsp butter
  • 1.5 cups water 1 cup semolina/cream of wheat
  • 1/4 cup unsalted butter
  • 1 cup sugar
  • 1/8 tsp ground cardamom

Melt the butter gently in a frying pan over medium heat and fry raisins and cashews gently until lightly golden, stirring frequently.

Boil the water and keep to one side. Melt the butter in a frying pan over medium heat and add the cream of wheat. Stir constantly until it turns a light golden brown . Add the hot water slowly and stir. The cream of wheat will absorb most of the water. It will be very stiff at this point. Add sugar, fried raisins, cashews and cardamom. The sugar will melt and thin the mixture. Cook over medium heat for another minute, stirring constantly until mixture becomes semi-solid. Pour mixture into a lightly buttered 8" square pan. Cut into 25 squares and serve at room temperature.
