Indian beverages are very cooling, perfect with a hot curry or on a hot summer day.
Mango Sherbert
3 ripe mangoes
2 pints water
pinch of salt
juice of 1 lemon (optional)
1 - 2 oz fine sugar (or to taste)
crushed ice (optional)
Remove the stone and peel from the fruit. Place pulp in a blender. Add rest of the ingredients and blend. Serve chilled.

Sweet Lassi
1 cup plain unsweetened yoghurt
pinch of salt
2 oz fine sugar (or to taste)
2 pints water
ice cubes
To decorate: grated lemon rind a few mint leaves.
Beat together the yoghurt, salt and sugar thoroughly. Add the water and mix well. Serve in tall glasses with ice and decorate with lemon rind and mint leaves.
